Bourbon must be produced in the U.S., made from a grain mixture that is at least 51% corn, distilled to no more than 160 proof (80% abv), aged in new charred oak barrels, entered into the barrel for aging at no more than 125 proof (62.5% abv), and bottled at 80 proof or higher. Bourbon has no specified state of origin or length of aging. So, we call ours Bootlegger 21 New York Bourbon. It’s made from 100% New York corn mash. We pot distill our Bourbon then age it in new charred toasted oak barrels until we feel they’re ready.
