“Pinot noir dislikes being blended, so it’s famously a soloist. It’s also stubborn- about where it will reveal its unique cherry and raspberry flavour. We were among the first to think of planting it in our ancient, high altitude vineyards in the Southern France. Our neighbours said we were crazy, but we never follow the herd.”
